Rick Bayless Tortillas

Ingredients
6ozAP Flour
1TblPlus 1t Vegetable Shortening
1TblPlus 0.5t Lard
1/2tspSalt
6fl ozWater (very warm)
Preparation
  1. Combine flour and fats in a large mixing bowl working the fat into the flour with your fingers until completely incorporated.
  2. Combine salt and very warm water and stir.
  3. Add 2/3 if the water to the flour/fat and stir until combined  and kneading additional small amounts of  water until smooth.
  4. Wrap dough in plastic wrap and rest on the counter top for at least 30 minutes.
  5. Heat cast iron skillet over medium high heat.  
  6. Roll out 1.5oz balls of dough.
  7. Cook tortilla on hot skillet for 30 to 45 seconds and then flip to other side for additional 15 to 30 until second side is slightly browned, but not crisp.
  8. Stacking tortillas in container with slightly damp paper towel.
